How it works
Four days, then tamales

Sunday — the menu goes up
Nadia decides what she’s making and posts it here and on Instagram. Three flavors she always makes, plus one special.

By Thursday noon — you order
Pick your tamales, pay, done. Quantities are limited and things do sell out before Thursday.

Thursday noon — orders close
Nadia shops and starts cooking against the exact orders she has. Nothing gets made that nobody ordered.

Friday — you pick up
In Carmel. You get the address and time by email once your order is in.
Why the wait?
Because tamales made this way take two days and can’t be rushed. Ordering ahead is what lets one person cook them properly instead of in a hurry.

What is a tamal?
Masa — corn dough — with a filling, wrapped and steamed. You unwrap the husk and eat what’s inside. The wrapper isn’t food.

Who makes them
Nadia
Nadia is from Veracruz, Mexico. She makes the tamales herself, by hand, in small batches.
That’s the whole reason the week works the way it does. One person can only make so many, and she’d rather make a smaller number properly than a bigger number badly.
